3 Healthy Quinoa Recipes + Video

 
Here is another quinoa salad recipe, with preparation instructions:

2. Quinoa Tabbouleh Salad
 

1 cup quinoa
2 cups vegetable broth
2 cloves garlic, minced
1 English cucumber, diced
2 tomatoes, diced
¼ cup white onion
fresh parsley
fresh mint
¼ cup olive oil
1 lemon
salt and pepper

Instructions:
 
 

In a medium saucepan, combine quinoa and vegetable broth. Bring it to a boil.
 
Reduce heat to low, cover and simmer for 15 minutes.
 
Turn off heat and allow quinoa to sit for 5-10 minutes.
 
Allow quinoa to cool completely.
 
In a large bowl combine cooled quinoa with cucumber, tomato, white onion, parsley and mint.
 
Dress with olive oil, lemon juice, salt and pepper.
 
Store in the refrigerator for 4-5 days.
