Especially if you’re often rushed in the morning, these healthy and energizing breakfast suggestions from Michelle are perfect starters for the day ahead. Watch how she creates 3 super-breakfasts, starting with Overnight Oats with fruit and chia seeds. Then there’s an awesome tropical green smoothie, followed by a yummy vegan yogurt parfait.
Here are the 3 popular recipes that she features in the video:
1. Overnight Oats
- 1 cup old-fashioned rolled oats (not quick oats)
- 1 cup vegan milk (soy, almond, coconut, hemp)
- 1 teaspoon chia seeds (optional)
- 1 handful fresh fruit sliced into bite-sized pieces
- Drizzle of maple syrup or agave nectar
Refrigerate for several hours or overnight. You can eat it cold straight from the fridge, pack it with you for eating at room temperature, or heat it up.

I make quick oats in mason jars all the time! Takes 1 minute and bfast is ready when you wake up! I prefer raw honey but organic maple syrup is fine too.
I’ll have to try this. I have the maple syrup and honey too.
