Sweet Potato Protein Pancake Recipe



Make these sweet potato pancakes in less than 10 minutes and choose whichever sweet potatoes are readily available: fresh mashed sweet potatoes, baked sweet potato with skin removed, or canned. No need to worry about a finely pureed sweet potato since all of the ingredients will be mixed in a blender.


This recipe makes a hearty, savory breakfast that will keep everyone energized for hours. Cottage cheese is the secret ingredient that adds a tangy flavor, extra sweetness and lots of healthy protein:


Each serving (approximately six silver dollar pancakes) has 16 grams of protein, or the amount you’d get from roughly three scrambled eggs.

Tip: Keep this recipe handy on your kitchen memo board and use it to re-purpose your leftover mashed sweet potatoes!


Here are the ingredients you’ll need to make 24 (silver-dollar size) Sweet Potato Pancakes:



  • 1 cup cottage cheese
  • 1 cup sweet potato puree (or leftover mashed sweet potatoes)
  • 1 cup old fashioned oats
  • 5 large eggs
  • 2 teaspoons pumpkin pie spice
  • 1 tablespoon maple syrup

Optional ingredients:
Cranberries
Flaked coconut
Maple syrup
Chia seeds
Mixed berries
