Quinoa & Sweet Potato Sticks



Here is Niomi’s favorite healthy Quinoa Vegetable Lunch with tasty Sweet Potato Sticks. She shows how to make both recipes in her popular What I Eat In A Day video. If you’re just looking for a light lunch, then you may want to save the Sweet Potato Sticks for an afternoon snack to share with family, friends and colleagues.

Here are the ingredients she uses to make the Quinoa dish:

1/2 cup Mixed Quinoa
1 cup Water
1/2 Kallo Vegetable Stock Cube
1/2 Lemon
3 Chestnut Mushrooms
1 Small Courgette
2 Small Carrots
1/4 Red Onion
1/2 tin Kidney Beans
1/2 tin Chopped Tomatoes
1/2 Red Chilli
The 3 easy steps to prepare this are:
1. Cook the quinoa with the water and stock cube in a saucepan according to the cooking instructions on the packet (usually about 20 minutes).

 

2. Dice the vegetables and once the quinoa is cooked stir in all the vegetables and the remaining ingredients.

 

3. Keep on a low heat for a couple of minutes then serve.
