3 Super Pasta Recipes (Video)

Here’s the third pasta recipe:

Greek Chicken Penne

 
 

1 box of penne
2 tbsp olive oil
1 small red onion, thinly sliced
2 cloves garlic, minced
2 chicken breasts, sliced
1 tsp Greek seasoning
1 can diced tomatoes
1 zucchini, chopped
1 cup marinated artichoke hearts
1/3 cup kalamata olives, chopped
lemon zest
1⁄2 cup feta cheese, crumbled

 
 

Instructions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large frying or saucepan, heat your olive oil.
  3. Add red onions and sauté for two minutes.
  4. Add garlic and sauté for another minute.
  5. Add chicken and season with Greek seasoning, salt and pepper.
  6. Cook until the chicken is cooked through and no longer pink.
  7. Add crushed tomatoes, zucchini, artichoke hearts and olives.
  8. Simmer for ten minutes on medium low heat.
  9. Pour sauce over cooked pasta.
  10. Mix in lemon zest and feta cheese.
  11. Stir to combine.
  12. Enjoy!
