Here are the easy preparation instructions to make Niomi’s delicious Italian Vegetable Stew:
- Dice all of the vegetables finely, and heat a large saucepan over a medium heat with a little olive oil.
- Fry the onion for a couple of minutes then add the carrots and fry for another couple of minutes.
- Now add the courgettes, mushrooms, garlic and chilli and fry for about 3 minutes more.
- Pour in the tinned tomatoes and kidney beans and simmer for about 5 minutes.
- If using, stir in the nutritional yeast and serve with fresh basil.
