Healthy Italian Vegetable Stew Recipe



This is Niomi’s favorite healthy dinner recipe: Italian Vegetable Stew. She shows how to make it in her popular What I Eat In A Day video. She places a cluster of basil leaves on top to make it picture-perfect and enhance both the flavor and aroma.


If you’re looking for more to put on the table for dinner, then whole wheat pasta or rice would go well with this recipe.


Here are the ingredients you’ll need to make this mouth-watering stew:

1/2 tin tomatoes
1/2 tin kidney beans
3 chestnut mushrooms
1/2 red onion
1/2 red chilli
1 small courgette
2 small carrots
1 garlic clove
Fresh Basil (to decorate)
Optional – 2 tbsp Nutritional Yeast
