<h3><strong>***Chai Spiced Quinoa ***</strong></h3>

2 cups almond milk, more for serving (I used Unsweetened Vanilla)<br />
1 cup dry organic quinoa<br />
1/2 Chopped apple<br />
1/2 tsp ground cinnamon<br />
1/4 tsp ground ginger<br />
1 pinch cloves<br />
1 pinch cardamom<br />
Stevia, or other sweetener, to taste<br />
</br><br />
<span style="text-decoration: underline;"><strong>Directions:</strong></span><br />
In a medium saucepan, bring almond milk, cinnamon, ginger, cloves, cardamom to a boil. Stir in quinoa and reduce heat to a low. Cover with lid and allow to simmer 15 &#8211; 20 minutes until almond milk has been absorbed and quinoa is tender.<br />
</br><br />
Top with chopped apple, cinnamon &#038; Stevia.<br />
Serve warm topped with more almond milk.</p></blockquote>

Eugenie shows how to make this special Sweet Potato Latte drink in a short video. Perfect in the morning or as an afternoon treat! It&#8217;s an easy-to-make and healthy drink that may be new to you, but it&#8217;s extremely popular in Korea and has an amazing delicious and addictive flavor.<br />

For each serving, she uses the following ingredients:</p>

<li>1/2 sweet potatoes, cooked, peeled, diced (100 grams/ 3.5 oz)</li>
<li>1 tablespoon walnuts</li>
<li>1 cup milk**</li>
<li>1 tablespoon acacia honey</li>
</ul>

<p>**Try substituting<em> coconut cream</em> or <em>soy milk</em> if you want to make this non-dairy.</p>
<p>Optional toppings:</p>

<p>Here are the simple steps to make an awesome, delicious <strong>Sweet Potato Latte:</strong></p>

<li>First, heat 1 cup of milk. Today I’m microwaving it for 1 minute and 30 seconds. And you can do this over stove top. Just simmer, don’t boil.</li>
<p></br></p>
<li>In a blender, add ½ of a sweet potato, cooked, peeled, and diced, 1 tablespoon of walnuts, and 1 tablespoon of acacia honey. Adjust the amount of honey to your liking.  Then pour in 1 cup of hot milk. And blend until homogeneous.</li>
<p></br></p>
<li>Pour in a warm mug cup.</li>
<p></br></p>
<li>Top with milk foam. And if you want, dust with ground cinnamon and decorate with chopped walnuts.</li>
<p></br></p>
<li>Sweeten to taste.</li>

This is not your ordinary gratin. It&#8217;s more like a gratin casserole with layers of thinly sliced sweet potato, onion, and orange-scented wild rice. This provides the healthy nutrients from grains and vegetables in one serving.<br />

It is baked in a coconut milk base flavored with garlic, lime, and red pepper flakes. This gives this dish a tangy-sweet richness with a hint of spice &#8230; finished with chopped, toasted hazelnuts for a welcome crunch.<br />
</br><br />
In addition, this vegan dish is suitable for anyone who is lactose intolerant or sensitive to gluten.<br />
</br><br />
Here are the ingredients to make this <strong>Sweet Potato Gratin</strong> (6 &#8211; 8 servings):</p>

<li>1.4 lbs/644 gr sweet potatoes (~2 medium)</li>
<li>3/4 cup/133 gr uncooked wild rice</li>
<li>1 large orange</li>
<li>1 medium yellow onion</li>

Follow these 5 steps to make delicious and nutritious <strong>Sweet Potato Gratin:</strong><br />

Preheat oven to 375°F (190°C)

Scrub sweet potatoes; leave skin on if organic and thinly slice using a mandolin (using the &#8220;thin&#8221; slicer, not &#8220;extra thin&#8221;) or a steady hand and sharp knife. Thinly slice onion with knife.
</li>
<p></br></p>
<li>
Cook rice according to package directions; drain any excess water not absorbed. Add zest of orange and juice of 1/4 of the orange to rice; season with salt and pepper and stir to combine.
</li>
<p></br></p>
<li>
Lightly grease a large gratin or deep baking dish (~3 qrt. capacity) with coconut oil. Layer 1/3 sweet potato slices, overlapping slightly, and 1/2 of onion slices. Season with salt and pepper, evenly distribute 1/2 wild rice mixture, and pour over 1/3 coconut milk. Repeat, finishing with final 1/3 sweet potatoes and final 1/3 coconut milk.

Cover dish with aluminum foil and bake 35-45 minutes, or until a knife can be easily inserted in sweet potato. Uncover dish, sprinkle with hazelnuts, set oven to broil, and return to oven without foil to brown slightly; another 5-8 minutes.</p></blockquote>

<strong>Notes:</strong> If you cook off the rice and slice the sweet potato in advance this dish can be assembled in 15 minutes. And if hazelnuts are not your thing, substitute macadamia nuts instead.</p></blockquote>

<p>Here are the 7 steps to make these delicious and healthy&nbsp;<strong>Almond Butter Muffins:</strong></p>

<li>Preheat oven to 375 degrees and line muffin tin with paper liners.</li>
<li>Prepare flax egg in a large mixing bowl and let set for a few minutes.</li>
<li>Add sweet potato puree, brown sugar, oil, and vanilla extract and mix. Then add almond milk and stir once more.</li>
<li>Carefully place whole wheat flour, baking powder, baking soda, salt and cinnamon into a sifter and sift over wet ingredients. Then add oat flour on its own (as it does not sift well in my experience) and stir until just combined.</li>
<li>Spoon batter into muffin tins until filled almost to the top. Then drop about 1 tsp almond butter onto the center of each muffin and gently swirl around with a toothpick or knife.</li>
<li>Bake for 20-22 minutes (or more) until golden brown and a toothpick in the center comes out clean. Remove from oven and let rest in tins for 5 minutes. Then transfer to a cooling rack to let cool completely.</li>
<li>Cool completely or they will not come off the wrapper well. Store in an air-tight container and refrigerate to ensure freshness. Will keep in the freezer for up to a few weeks.</li>
