Here’s a popular energy bar recipe with everything: packed with protein and wholesome ingredients, a fantastic flavor and super easy to make. It will only take you 10 minutes to mix up the oats, almond butter, honey and rice cereal … but then you’ll need to wait 30 minutes while it cools and sets in the fridge.
Note that there are no peanuts in this recipe, just in case you or your family and friends have a peanut allergy.
The texture of these bars is intentionally thick, soft, crunchy and fudgy so they melt in your mouth with an occasional crunch.
Here’s are the ingredients you’ll need to make 12 of these yummy No-Bake Almond Fudge Protein Bars:
- 1 cup oats, ground into a flour
- ½ cup quick oats
- ⅓ cup vanilla protein powder (I used whey)
- ½ cup crispy rice cereal
- ½ cup almond butter (or peanut butter)
- ⅓ cup honey
- 1 tsp. vanilla extract
- Optional: 2-3 Tbsp. chocolate chips for melting

Instead of rice krispie try puffed organic millet. And reduce the honey. I make similar and for four cups of oatmeal, we use half a cup of honey. Perfect.
