Famous “BLU-LEM” Breakfast Muffins

Here are the ingredients you’ll need to make these healthy and delicious Blueberry Lemon Muffins:
 

2 1/2 c. old-fashioned oats
1/4 c. chia seeds
1 tsp. baking powder
1/2 tsp. salt
2 TB. coconut oil, melted and slightly cooled
2 c. almond milk
2 eggs
1/3 c. honey
zest of one lemon
1/2 c. lemon juice (about 3 small lemons)
1 tsp. vanilla
2 c. blueberries (I used frozen)

 

Blueberries are sweetened with honey then hit with tart lemon zest and juice. It’s the perfect balance. I also added chia seeds for extra protein, fiber and nutrients. You may think the “batter” looks to loose but trust me, chia seeds and oatmeal will suck up all the liquid and bake perfectly.
