Famous “BLU-LEM” Breakfast Muffins

On a “Top 10” list of healthy breakfast foods, you’ll typically find Oatmeal and Blueberries near the top. This recipe for luscious Blueberry Lemon Muffins uses healthy lemon juice and lemon zest along with super-healthy blueberries, oatmeal and more to create a delicious breakfast (or lunch or snack) treat.

Lots of the nutrition comes from the Oatmeal with its soluble fiber that decreases LDL (the bad) cholesterol. The Blueberries lower inflammation and contain anthocyanins (a disease-fighting antioxidant).
