Peanut Butter Banana Chocolate Chunk Muffins

 
Follow these 6 simple steps to make a batch of these delicious Peanut Butter Banana Chocolate Chunk Muffins:
 
 

1. Preheat the oven to 400 degrees and line a standard muffin pan with paper liners. Set aside.

2. In a large bowl, whisk together the flours, baking powder, baking soda, and salt. Set aside.

3. In a medium bowl, vigorously whisk the sugars, oil, egg, and egg yolk until frothy, about 1 minute. Whisk in the mashed bananas, peanut butter, milk, yogurt, and vanilla until well incorporated. Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the chocolate chunks.

4. Scoop the batter evenly into the paper liners. Bake on the middle rack of the oven for 18-22 minutes, checking for doneness after 18 minutes. The muffins are done when a toothpick inserted into the center comes out clean.

5. Remove from heat and cool for 10 minutes on a wire rack, then remove from the pan and allow to cool completely or serve warm.
