If you love carrot cake like I do, then you’ll love this healthy “overnight oats” breakfast recipe with cinnamon, nutmeg and veggies. You’ll undoubtedly get some strange reactions if you share this idea with family and friends, but as soon as they taste it they’ll call you a genius.
It is easy to make in less than 10 minutes, and is a lot like eating a carrot cake dessert for breakfast!
Note that this recipe for 2 or 3 servings is gluten-free (depending on the oats you choose) and only needs to soak for a couple of hours.
Here’s what you need to make this breakfast delight:
Carrot Cake Overnight Oats
Ingredients:
- 1 cup gluten free oats
- 1 cup of milk of your choice (rice, oat or coconut milk are good options to keep keep it nut free and dairy free)
- 1 large carrot, peeled and grated
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1/2 tsp nutmeg
- 1 large banana, mashed
After mixing all of these ingredients together, just store overnight in an airtight container in the fridge.
Serve alone or topped with nuts, seeds, fruit and/ or yoghurt.

Looks yummy. Carrot cake is one of my favorite things…think I’ll be missing the cream cheese frosting on the oatmeal, though.
