  • 12 eggs
  • 1 small bell pepper, diced
  • ¼ cup diced onion
  • 2 ounces diced ham steak
  • Salt and pepper to taste

Follow these 4 easy steps to make these delicious Western Egg Muffins:

  1. Pre heat oven to 350 and spray a 12-cup muffin pan with cooking spray (or brush with coconut oil).

  2. Whisk eggs season with salt and pepper.

  3. Pour in to muffin tins and then evenly sprinkle in toppings.

  4. Bake for 18-20 minutes. Enjoy!

  1. This does not make sense — it says there is only 1.4 gm. of carbs but there is 8.8 gm of sugar — (can’t figure out where the sugar is coming from either lol ) — so that would make the total carbs 10.2 gm. which is still low — but overall sounds like a good recipe and I will try it.
