Make “Authentic” OVERNIGHT OATS with One of These Delicious Toppings

Jodi Kay takes the original overnight oats recipe for vegan & gluten-free Orchard Bircher Muesli and adds fresh cherries and toasted hazelnuts on top to make this truly delicious. She explains that this recipe is “totally adaptable to anything you have in your fridge” with its fiber-rich whole oats base. Use any fresh, seasonal fruit and then try sweet apple juice as a healthy sweetener to enhance the fruity flavors in this recipe.

Tip: A 1:1 oats to liquid ratio is good for soaking overnight, but save a little extra juice or liquid to stir in in the morning to make this muesli extra creamy.

Recommended ingredients for approximately 2 servings:

  • 1 + 1/2 cup whole rolled oats
  • 1/4 cup chopped hazelnuts
  • Handful each dried apricots and prunes, chopped

  • 3/4 cup organic, unfiltered apple juice
