Recipe for Vegetarian Minestrone Soup



Here’s a 5-star, low-calorie (100 calories per serving) recipe from Jolinda that you may want to memorize and use on a regular basis. It calls for lots of tasty, low-fat vegetables and is healthy for everyone, including vegetarians and vegans. The ingredients include tomato, carrots, celery, green beans and zucchini. Then add some some fresh basil and garlic, and simmer slowly for maximum flavor.


If  you want to make it gluten-free, just leave out the macaroni and call it vegetable soup!



Here’s the list of ingredients for 6 servings:

  • 4 cups vegetable broth
  • 4 cups diced tomatoes
  • 1 tbsp chopped fresh basil
  • 1/2 tsp oregano
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1/2 onion, chopped
  • 3 zucchini, chopped
  • 1 cup green beans, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • salt and pepper to taste
  • 1 1/2 cups macaroni pasta


Start with combining all of the ingredients, without the pasta, in a large pot and simmer over a low heat until the vegetables are tender (at least an hour). Then add the pasta and bring to a slow simmer, again, to cook until the pasta is done (approximately 20 minutes). Remove the bay leaf before serving, and enjoy!
