A Perfect Vegetarian Mug Omelette



Whoever thought of cooking eggs in a microwave was a genius! Since you can cook a perfect egg in a microwave oven, it makes sense to use the microwave to cook up an omelette! You can even make it up the night before and store in the fridge until you’re hungry …

Eggs are a natural fast food, inexpensive and full of protein. Add whatever little bits you have in your fridge to make a complete meal (breakfast, lunch or dinner) and call it an omelette, or whatever. Serve with some toast and you have a complete meal.

The following ingredients are recommended to start with for each delicious “omelette”:

  • 2 eggs
  • 2 tbsp milk
  • 1 scallion or green onion chopped
  • 1 tsp parsley
  • salt and pepper

Follow these steps to make a perfect vegetarian Mug Omelette:

  • Add eggs to mug and whisk together with a fork

  • Add parsley, scallions, milk, salt and pepper. Whisk until all ingredients are completely mixed together.

  • Microwave for one minute. Stir and break up any large chunks of egg.

  • Cook for another 45 to 60 seconds or until eggs are set.

  • Top with a sprinkle scallions, salt and pepper

  • Enjoy!



Take care not to overcook as your omelette will get rubbery.
