Oatmeal Apple Breakfast Bars



This easy-to-make recipe for Oatmeal Apple Breakfast Bars is like making a decadent dessert for breakfast, except these treats are naturally sweetened, clean eating and healthy for you. You can also choose to make these bars gluten-free and dairy-free.

Oatmeal also comes to mind when I’m thinking about breakfast. Mostly because it’s a typical breakfast food, but it’s also very frugal. At less than 10¢ for a 1/2 cup serving, it’s the most affordable grain that I know of. Plus it’s packed with nutrients too, making it my preferred grain for the first meal of the day.

One objective of this recipe was to eliminate the normal processed sugars and sweeteners and take advantage of the natural sweetness of fresh apples in this case. The amount of butter is this recipe has been kept to a minimum, and whole grains are used in place of all-purpose flour. The result is a batch of healthy breakfast bars that can be pulled together in less than 30 minutes … and they’re also popular for lunch, snacks and dessert!


Tip: double the recipe!


Note that you can save time in the morning by making this the night before and storing in the fridge for a quicker breakfast when you’re in a rush. In this case, add approximately 5 minutes to the baking time.
