“Overnight Oatmeal” Breakfast for Vegans, and Everyone Else!

 
Here is a breakfast recipe that uses a ripe banana to make it sweet and delicious. Angela’s instructions for this Green Vegan Overnight Oats treat are simple: just spend 5 minutes to make this before going to bed. In the morning you will have a green vegan overnight oat hybrid waiting for you in the fridge. There’s no baking and it’s soy-free.

Here are the recommended ingredients for 1 serving:
 

  • 1 large handful fresh spinach or small handful of kale
  • 1 large ripe banana
  • 1.5 tbsp chia seeds (necessary for thickening)
  • 1 cup almond milk
  • 1/3 cup regular, rolled oats
