Impress your family and friends with a delicious “upside-down” Giant Apple Pancake. This healthy treat is perfect for a special breakfast, snack or dessert! It has an authentic pancake fluffiness, but is more of a “cake” that’s baked in the oven. Placing the apples under the batter ensures complete cooking, so it won’t end up under-baked. Then it’s flipped over to make a lovely meal.
I made these with almost no added sweetener, as I enjoy the natural sweetness of the apple. For breakfast, I serve my slice with almond butter for a complete meal. To serve the pancake as a conventional dessert, however, I’d add the suggested sweetener to the recipe, and would even top each serving with some maple syrup and perhaps a dollop of whipped cream. A berry coulis would also be superb drizzled over the top of the pancake.
Tip: Wrap up any left-over pieces of the pancake and just store them in the fridge for breakfast for the week ahead.
