These little crustless Quiche Bites make a perfect quick breakfast or a breakfast on-the-go when you’re rushed in the morning. Tip: double or triple this recipe to make a big batch in advance to last the whole week, and just store them in the fridge or the freezer.

Note that this version of the recipe features spinach and mozzarella, but cooked broccoli and cheddar or crispy bacon can also be used as yummy substitutes or additions.
