Quinoa Superfood Breakfast Bowl

This warm and satisfying Quinoa Breakfast Bowl is supercharged with chia seeds, goji berries and a variety of other healthy ingredients to satisfy your hunger in the morning. There are also ingredients to boost metabolism and burn calories to help get your day off to a perfect start.

These ingredients will make 2-3 servings:

     
     

  • 1/2 cup of quinoa
  • 1 1/2 cups water
  • 1/2 cup coconut milk
  • 2 dried medjool dates (more for added sweetness), seeds removed and chopped
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cardamon
  • 2 tablespoons pepitas
  • 1 tablespoon shredded coconut
  • 1 tablespoon golden raisins
  • goji berries, chia seeds, banana and coconut flakes, to garnish
