These healthy Chocolate Chip Pumpkin Energy Bars are great snacks and also good for dessert. They’re made from nutritious coconut flour and use no refined flours or sugars (… if you don’t count the minimal refined stuff that might be in the chocolate chips.) Everyone loves the creaminess and the tasty pumpkin flavor!
You’re supposed to let them cool completely (see Step #5) before cutting them up into bars to enjoy … but I’ve never been able to find the patience to wait.
Here are the ingredients you’ll need to make 9 of these Chocolate Chip Pumpkin Energy Bars:
- 15 ounce can of pumpkin puree
- ¾ cup coconut flour
- ½ cup real maple syrup
- ¼ cup unsweetened almond milk
- 2 eggs
- 1 tsp. ground cinnamon
- ½ tsp. ground ginger
- ¼ tsp. ground cloves
- ¼ tsp. salt
- ½ tsp. baking soda
- 1/3 cup chocolate chips
