Try this healthy protein-rich “overnight oats” recipe if you enjoy eating pumpkin pie and are looking for something delicious for breakfast.
Once you’ve gathered all of the ingredients, this is easy to make. Just mix everything together in an air-tight mason jar or plastic container, then place in the fridge to soak overnight. This softens the oats so they don’t need to be cooked or microwaved. You can keep this in the fridge for up to 4 days in an airtight container.
Any oats will work, including instant, steel-cut, and others. Then there are two more key ingredients in this recipe: Greek yogurt (with lots of protein) and pumpkin purée. Use healthy pumpkin purée, not canned pumpkin filling.
