2. GLUTEN-FREE BISQUICK PANCAKES

This recipe makes classic light and fluffy pancakes!
INGREDIENTS
- 2 cups Homemade Gluten-Free Bisquick Substitute
- 1 cup milk, traditional or dairy-free
- 2 large eggs, whisked
- 1/2 teaspoon vanilla extract
- nonstick cooking spray or butter for the pan
INSTRUCTIONS
- Whisk together all ingredients.
- Lightly grease a nonstick griddle with nonstick cooking spray. Or melt a little butter onto the griddle. Heat griddle over medium heat. Spoon pancake batter, about 1/4 cup of batter for each pancake, onto hot griddle. You want the batter to sizzle as it hits the griddle.
- Cook until bubbles appear at the edges of the pancake. Flip. Cook an additional minute or two.
- Serve with butter and syrup.
