This Berry Breakfast Muffin recipe, loaded with three different kinds of berries, is a healthy way to get a blast of antioxidants with a burst of flavor in every bite. They’re unbelievably delicious. Go ahead and use an entire bag of frozen mixed berries if the fresh ones aren’t in season.

Here are the ingredients you’ll need to make 12 muffins:
 

1/2 cup all purpose flour
3/4 cup whole wheat flour
3/4 cup old fashioned oats
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup brown sugar
1 large egg, whisked
1 teaspoon vanilla extract
3/4 cup milk
1/3 cup canola or vegetable oil
2 cups frozen berries

  1. They are good , easy to whip up….but even though I sprayed the tins well, some didn’t want to come out in one piece. They still got gobbled up. Will use the paper cups next time.
