These healthy and wholesome Trail Mix Breakfast Cookies are whole grain cookies packed with old fashioned rolled oats, dried fruit, nuts, chocolate chips and more. Unsweetened shredded coconut is highly recommended, but optional. On top of the healthy nutrients there’s no butter or refined sugars in this recipe, and these delicious cookies have a perfect texture and sweetness. Chewy, moist, and full of flavor.
The “trail mix” part of this recipe means that you can pick and choose specific ingredients to fit your personal taste and what you may already have on the shelf:
Dried fruit: cranberries, raisins, cherries, or apricots
Chocolate chips: dark, semi-sweet, white, or a combination of all!
Nuts: walnuts, almonds, hazelnuts, pecans, pistachios
You can always use agave syrup or honey in place of the maple syrup, and canola oil is great substitution for the coconut oil.
