Special "Huevos Rancheros" Recipe



This could be called a Mexican variation of Deviled Eggs since it’s made with hardboiled eggs, cheese and salsa. It’s fun to make and healthier than normal deviled eggs (140 calories per serving, excluding the corn tortillas).

Here are the ingredients you’ll need for 2 servings:

  • 4 hardboiled eggs
  • ½ c black beans, drained and rinsed
  • ¼ c shredded reduced-fat Mexican cheese blend
  • ¼ c tomato salsa
  • 4 small corn tortillas
