Quick Mug "Pancakes" with Blueberries (Video)



Use your microwave oven instead of a griddle to make healthy Blueberry “Pancakes” in a mug, and you’re done in 6 minutes.


This recipe calls for delicious frozen blueberries but you can always be creative and add bananas, strawberries or whatever healthy flavors you feel like! It’s often convenient to mix up the ingredients the night before and store in the fridge until you’re ready for breakfast.


For each “pancake” you’ll need the following ingredients:

3 tbsp flour
1⁄4 teaspoon baking soda
2 tsp maple syrup/ honey/ agave
1 tbsp milk
1 tbsp flavorless oil (canola, coconut, vegetable etc)
1 egg
1 tbsp blueberries, frozen



Here are the easy preparation instructions:

  1. Whisk together all ingredients in a microwave safe mug. Mix thoroughly until no lumps.

  2. Microwave roughly for 1 minute (timing is based on my 1200W microwave so your timing might vary)

  3. Enjoy immediately!

  4. Top with a little maple syrup and some more blueberries

Take care not to overcook as your mug cake will get rubbery.
