When you realize that you can cook a perfect egg in a microwave oven, it makes sense to use the microwave to cook up an omelette! You can even make it up the night before and store in the fridge until you’re hungry …
Eggs are a natural fast food, inexpensive and full of protein. Add whatever little bits you have in your fridge to make a complete meal (breakfast, lunch or dinner) and call it an omelette, or whatever. Serve with some toast and you have a complete meal.
For each “omelette” you can start with the following ingredients:
- 2 eggs
- 2 tbsp Milk
- 1 scallion/ green onion chopped
- 1 tsp Parsley
- salt and pepper
Here are the easy preparation instructions:
- Add eggs to mug and whisk together with a fork
- Add parsley, scallions, milk, salt and pepper. Whisk until all ingredients are completely mixed together.
- Microwave for one minute. Stir and break up any large chunks of egg.
- Cook for another 45 to 60 seconds or until eggs are set.
- Top with a sprinkle scallions, salt and pepper
- Enjoy!
Take care not to overcook as your omelette will get rubbery.

Do not use a microwave! It destroys the food nutrients.
Tiffany, thanks for your comment. Please read Microwave Ovens & Nutrients and understand that normal baking, cooking and frying destroy more nutrients that microwave ovens! Eating raw food is obviously the healthiest.
