Overnight “Muesli” Oats with Lots of Options

Take whatever you happen to have in your fridge and add it to this basic overnight oats recipe for Orchard Bircher Muesli. Keep it vegan & gluten-free if you choose, then make it perfect by adding fresh, seasonal fruit (if available). Try sweet apple juice as a healthy sweetener to enhance the fruity flavors.

Jodi Kay found some fresh cherries and toasted hazelnuts to put on top to make this truly delicious. She explains that this recipe is “totally adaptable to anything you have in your fridge” with its fiber-rich whole oats base.

Tip: A 1:1 oats to liquid ratio is good for soaking overnight, but save a little extra juice or liquid to stir in in the morning to make this muesli extra creamy.

Recommended ingredients for approximately 2 servings:

  • 1 + 1/2 cup whole rolled oats
  • 1/4 cup chopped hazelnuts
  • Handful each dried apricots and prunes, chopped
  • 1/2 teaspoon cinnamon
  • 3/4 cup organic, unfiltered apple juice
  • 3/4 cup  + 1/2 cup unsweetened almond milk
