Make-Ahead EGG & QUINOA MUFFINS to Enjoy for Breakfast



Now just follow these simple steps to make these popular Egg & Quinoa Muffins:

1. While preheating the oven to 350 F degrees, in a large bowl first whisk eggs with salt and pepper, and then add the rest of the ingredients.

2. Pour the mixture into a standard muffin tin (with 12 cups) and sprinkle tops with the remaining cheese. It is recommended to use silicon liners as the muffins tend to stick to the paper liners or greased muffin tin.

3. Bake for 20 to 25 minutes. You can check if your muffins are done by inserting the toothpick or a knife in the center of the muffin. If it comes out clean, your muffins are ready.
