Here’s a great recipe (with “how-to” video) for delicious and nutritious Gluten-Free Breakfast Waffles … it doesn’t get much better than this! They’re extra-light and made with oats, almond milk and Greek yogurt.
Here’s what you’ll need to make a half-dozen:
- 2 cups rolled oats
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 tablespoon honey
- 3/4 cup unsweetened almond milk, plus a little more to thin (if necessary)
- 1/4 cup plain, non-fat Greek yogurt
- 1 large egg
- 1 tablespoon coconut oil, melted
- 1/2 teaspoon vanilla extract
