Make a Big Batch of Easy No-Cook APRICOT-OAT BREAKFAST ENERGY BARS to Keep in the Fridge for a Week (or Longer) …



These delicious protein-packed Apricot-Oat Energy Bars are easy to make: no cooking required! Perfect for breakfast and for snacking whenever you’re looking for an energy boost along with healthy nutrition.


Tip: double the recipe and store these in an airtight container for up to a week … or wrap them individually in parchment paper and stored in the refrigerator or freezer for longer.


Here are the ingredients you’ll need for 6 of these delicious and nutritious energy bars:

12 dried apricots
4 strawberries
1/3 cup water
1/4 cup peanut butter
1/2 teaspoon vanilla
1/8 teaspoon salt
4 scoops pea protein
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cup oats

Nutrition values per bar:
278 calories,
8 g fat (1g saturated),
30 g carbs,
23 g protein,
4 g fiber




Just follow these 3 easy steps to make these delicious (vegan!) Apricot-Oat Energy Bars:

1. Blend 6 apricots, strawberries, water, peanut butter, vanilla, and salt in a blender or food processor 1 minute until smooth. Add protein powder, cinnamon, and nutmeg.


2. Finely chop remaining 6 apricots and place in a mixing bowl with oats. Top with blended apricot mixture. Hand-mix ingredients until they are smooth.


3. Place on a lined 8-by-8-inch cooking pan and spread mixture evenly. Freeze for 45 minutes. Remove from the freezer and cut into 6 even bars.
