Healthy Falafel Salad with Spicy Sauce



Here’s a special recipe to make a healthy Falafel Salad with either homemade or store-bought falafel patties in a bed of crisp greens topped with tomato, onion, cucumber, fresh mint and other herbs. Then add a spicy yogurt sauce to make it perfect!


Here are the ingredients you’ll need for 4 servings of salad with the sauce:

for the SPICY YOGURT SAUCE:

1 cup Greek yogurt
Juice of 1 lemon
Pinch of salt
2 tablespoons Sriracha, or more to taste
1 teaspoon smoked paprika


for the SALAD:

1 bunch green-leaf lettuce, cored and chopped
1 head radicchio, cored and chopped
1 cucumber, seeded and chopped
1 pint cherry tomatoes, quartered
½ red onion, chopped
1 garlic clove, minced
½ cup chopped parsley
½ cup chopped cilantro
¼ cup chopped mint
1 tablespoon olive oil
Salt and freshly ground black pepper
16 falafel (homemade or premade)
