2 avocados–halved, pitted and peeled

1 garlic clove, smashed

1 bunch scallions, roughly chopped

Juice of 1 lemon

¼ cup extra-virgin olive oil

Salt and freshly ground black pepper

½ cup chopped parsley, for garnish
