Time for some light and healthy Spinach & Blue Cheese Biscuits! These are mouth-watering and extra savory: baked with healthy sautéed spinach, green onions, garlic and flavorful cheese to make them tangy and spicy.
They are perfect as dinner rolls, or for breakfast, or whenever you want them.
Here are the ingredients you’ll need to make 10 biscuits:
For the spinach mixture:
- 2 tablespoons olive oil
- 6 ounces frozen chopped spinach, thawed and pressed
- 1/3 cup chopped scallions
- 1 clove garlic, minced
- salt and pepper to taste
- pinch of freshly ground nutmeg
- 1/3 cup crumbled blue cheese (or feta as a substitute)
For the biscuits:
- 3 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup cold unsalted butter, but into small cubes
- 1 large egg, lightly beaten
- 3/4 cup cold buttermilk
- 1 large egg, beaten for egg wash
