[Video] Make a Big Batch of Deliciously Spiced APPLE CARROT MUFFINS for Breakfast and for the Freezer!


Here’s another creative muffin recipe from Sara Lynn. Watch the video to learn how to make her Spiced Apple Carrot Muffins and two more of her favorites. Here are the ingredients that you’ll need:

1 cup whole wheat flour
1 cup all purpose flour
1⁄2 cup sugar
1 tbsp baking powder
1⁄2 tsp salt
2 eggs
1⁄4 cup butter, melted
1 cup plain yogurt
1⁄2 cup applesauce
2 small apples, grated
2 carrots, grated
1 tsp cinnamon
1⁄4 tsp ground ginger
1 tsp vanilla extract

While you’re at it, you might want to make up a bigger batch and just keep whatever you don’t need today in the freezer!


Here’s how to make Spiced Apple Carrot Muffins in 9 easy steps:


  1. Preheat oven to 375 degrees.

  2. In a large mixing bowl add dry ingredients and stir until well
    combined.

  3. In a medium bowl whisk eggs, melted butter, applesauce and vanilla extract.

  4. Combine wet ingredients with dry ingredients and mix just until combined.

  5. Mix in grated apple and grated carrot.

  6. Scoop into muffin tin lined with cupcake liners.

  7. Bake for 25 to 30 minutes.

  8. Eat within 2-3 days or store in the freezer for up to 3 months.

  9. Enjoy!
