Make These Mouth-Watering ENERGY-BOOSTING MUFFINS for Breakfast and Later in the Day

 
Now just follow these simple steps to make these amazing super-healthy Breakfast Muffins:
 
 

1. Mix together flour, sugar, cinnamon, baking powder and salt in a large bowl.

2. Add dried fruit, coconut, seeds, raisins, crushed pineapple, apple and carrots. Stir to combine.

3. In separate bowl whisk eggs with oil and vanilla.

4. Combine this mixture with dry ingredients and blend well. This will be very thick.

5. Fill 12 cupcake baking cups heaping full.

6. Bake at 350 degrees for 30-40 minutes in a convection oven (a bit longer in a non-convection oven).

7. Cool slightly, then move to wire rack to cool or eat warm!

Note: These muffins freeze well if you’re not eating all of them right away!
