Try This “Early Morning Glory” SUPER-MUFFIN Recipe!



Try these Healthy Morning Glory Muffins that are packed with whole wheat flour, flaxseed, carrots, apples, nuts, Greek yogurt and more healthy ingredients to get you started in the morning.


They are super easy to customize to whatever leftover bits are hiding in your pantry: dried apricots, pecans, chocolate chips or whatever.


Make plenty of these muffins since they’re easy to store in the freezer. Here are the recommended ingredients to make 20:

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1/4 cup ground flaxseed
2/3 cup sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground ginger
2 large carrots, peeled and grated (about 1 cup)
1 large tart apple, peeled, cored, and grated
1/2 cup unsweetened shredded coconut
1/2 cup chopped walnuts
1/2 cup dried cranberries
3 large eggs
2 ripe bananas, mashed
1/2 cup Greek yogurt
1/3 cup canola oil
2 tablespoons molasses
2 teaspoons vanilla extract
