Try this delicious Tofu Scramble & Sweet Potatoes Breakfast Bowl for a healthy start in the morning. This is an easy make-ahead recipe so you can store this for up to 4 days in the fridge. A substantial, savory breakfast that gets lots of flavor from a variety of veggies and spices added to small chunks of healthy tofu.

I’ve finally found a tofu recipe that I love! It has plenty of flavor, a great texture, and served with these breakfast sweet potatoes and a dollop of Greek yogurt (or even better: avocado and cherry tomatoes), and you have yourself a healthy, delicious breakfast bowl that is actually going to keep you full!

Note that the sweet potatoes are a key ingredient: sweet, savory, creamy and the perfect complement to the tofu scramble!



Here are all the ingredients you’ll need to make 6-8 servings of this delicious Tofu Scramble & Sweet Potatoes Breakfast:


for the Breakfast Sweet Potatoes:

1.5 lbs sweet potato, cut into ½ inch cubes (5-6 cups)
1 tablespoon olive oil
2 teaspoons chili powder
½ teaspoon salt

for the Tofu Scramble:

1 block extra firm tofu
½ red onion, finely chopped
2 bell peppers, finely chopped
2 cups asparagus, chopped
1 teaspoon cumin
1 teaspoon ground coriander
½ teaspoon salt
¼ teaspoon pepper
