Enjoy These Easy No-Bake “BLONDIES” for Breakfast!



These delicious, thick, chewy, no-bake Nut-Butter Breakfast Bites (aka “Blondies”) are also good for desert! Quick, easy and deceptively filling. Also naturally gluten-free, vegan, dairy-free, refined-sugar-free, and thoroughly enjoyable.


We prefer making this recipe with peanut butter and roasted peanuts, but you can always use a different type of nut butter if you so desire:

Swap out the peanut butter for drippy almond butter, cashew butter or sunflower seed butter. Protein-wise, this works great with this vegan protein powder, this casein protein powder, and this paleo friendly option!

Note that there are 3 delicious layers in this popular treat:

Bottom layer- A thick and chewy peanut butter bar.


Middle layer- Crushed and whole roasted peanuts,


Top layer- A peanut butter fudge frosting.

These healthy Breakfast Bites are meant to be a morning meal staple with a solid balance of protein, fiber, healthy fats and slow-releasing carbohydrates. They’re perfect to power you through the morning until lunchtime.



Surprisingly enough, there’s no butter, no oil, no flour and no granulated sugar in this recipe for super-delicious Nut-Butter Breakfast Bites.


Here are the ingredients you’ll need to make 6 of these delicious and deceptively filling treats:

1 1/2 cups oat flour (gluten free, if needed)*
1/4 cup coconut flour
pinch cinnamon
2 scoops vanilla protein powder (optional)
Granulated sweetener of choice**
1/2 tsp vanilla extract
1/2 cup smooth peanut butter (can sub for another nut butter/nut free spread)
1/2 cup brown rice syrup (sub for honey or maple syrup for paleo option)
1 T + milk of choice***
1/4 cup crushed peanuts (optional)
1/4 cup whole peanuts (optional)

Notes:

* Sub for almond flour for paleo option. Alternatively, you can use one cup TOTAL of coconut flour (omit the 1/4 cup coconut flour).


** If protein powder is sweetened, you can omit OR if you don’t use protein powder, adjust accordingly.


*** Depending on the blend of flours you use, you may need less or more. Adjust accordingly.
