It only takes 15 minutes to make this quick version of the classic, delicious Hollandaise Sauce … so you can complete your Eggs Benedict dish and add this to a variety of other special recipes!
Here are the ingredients you’ll need:
2/3 cup butter
3 pasteurized egg yolks
2 tablespoons lemon juice
¼ teaspoon salt
1/8 teaspoon cayenne pepper
3 tablespoons boiling water
Now just follow these easy steps:
1. Melt the butter until evenly melted and begins to steam.
2. In a blender, blend the egg yolk with lemon juice, salt and cayenne until pale yellow.
3. Slowly pour the butter and boiling water into the egg mixture with blender on low setting.
Your Hollandaise Sauce is ready when the color turns lighter and becomes “chiffon yellow”. Adjust the seasonings to suit your taste if you want, then quickly pour over your servings of Eggs Benedict.
Refrigerate any sauce that’s left so you can use this with other meals.
