You will need the following ingredients to make this low-carb Egg Salad (makes enough for 3 to 4 sandwiches):
3 large hard-cooked eggs
1/4 cup finely chopped celery
1 green onion, finely chopped, optional
2 to 3 tablespoons mayonnaise
dash freshly ground pepper
1/4 teaspoon salt, or to taste
The preparation instructions are easy:
- Put eggs in a medium bowl; chop well.
- Blend with the celery, chopped green onion, and mayonnaise, to taste.
- Stir in salt and pepper to taste.
