These healthy <strong>Chocolate Chip Pumpkin Energy Bars</strong> are great snacks and also good for dessert. They&#8217;re made from nutritious coconut flour and use no refined flours or sugars (&#8230; if you don&#8217;t count the minimal refined stuff that might be in the chocolate chips.) Everyone loves the creaminess and the tasty pumpkin flavor!<br />

You&#8217;re supposed to let them cool completely (see Step #5) before cutting them up into bars to enjoy &#8230; but I&#8217;ve never been able to find the patience to wait.<br />

<p>Here are the ingredients you&#8217;ll need to make 9 of these <strong>Chocolate Chip Pumpkin Energy Bars</strong>:<br />

Actually there are two recipes: first to make <em><strong>Salted Pumpkin Spice Syrup,</strong></em> and then to make a cup of <em><strong>expresso</strong></em> with the Salted Pumpkin Spice Syrup as one of the key ingredients. You can do all of this in 10 minutes.</p>
<p><em>This recipe is vegan, gluten-free, grain-free, oil-free, refined sugar-free and soy-free.</em></p>
<p>Here are the ingredients you&#8217;ll need to make 3/4 cup of the special <em><strong>Salted Pumpkin Spice Syrup:</strong></em><br />

<p>Grab a blender and combine:</p>
<blockquote><p>3/4 cup light vanilla soymilk,</p>
<p>1/2 cup canned pure pumpkin,</p>
<p>1/4 cup fat-free whipped topping (thawed from frozen),</p>

<em><strong>Tip:</strong> Add a little nutmeg or pumpkin pie spice to bring out the pumpkin flavor even more.</em><br />

Here&#8217;s the recipe for the basic Pumpkin-only Sauce that is perfect in its own right and contains only 80 calories with 1g fat:<br />
</br><br />
Start with a small bowl and combine these ingredients to make a pumpkin mixture:</p>
<blockquote><p>1/4 cup canned pure pumpkin,</p>
<p>1/4 cup light plain soymilk,</p>
<p>1/2 tsp. garlic powder,</p>
<p>1/8 tsp. salt,</p>
<p>a dash of black pepper.</p>

After mixing the initial <strong>Perfect Pumpkin Sauce</strong> ingredients well, grab a small sauce pan and over medium-high heat, combine:</p>
<blockquote><p>1/4 cup fat-free chicken broth,</p>
<p>1/4 cup finely chopped onions,</p>
<p>1/2 tsp. chopped garlic,</p>
<p>half a wedge of light creamy Swiss cheese.</p></blockquote>
<p><strong>Then:</strong><em><br />

<blockquote><p>Cook until broth has evaporated, 2 &#8211; 4 minutes.<br />
</br><br />
Reduce heat to medium, and cook until onion and garlic begin to brown, about 1 minute.<br />

The concept of pumpkin and coffee together generate mixed reactions, but the spices typically associated with both work amazingly to produce an amazingly delicious result. In this recipe one of the bonuses is having no sugar and fat overload.<br />

<p>You&#8217;ll love the flavor of gingerbread and the classic spices used to create these pancakes. Then add a little butter and molasses on top!<br />

<p>For each breakfast serving of <strong>Pumpkin Gingerbread Pancakes</strong> you&#8217;ll need the following ingredients:<br />
&nbsp;</p>
<blockquote><p>2 T coconut flour, sifted (can sub for gluten free or oat flour)<br />
1/2 tsp baking powder<br />
1 scoop vanilla or neutral tasting protein powder (optional)<br />
1/2 tsp ginger<br />
1/2 tsp cinnamon<br />
1/2 tsp nutmeg<br />
1/4 tsp sea salt<br />
1-2 T granulated sweetener of choice<br />
2 egg whites (for a vegan option, substitute for 1 flax egg- 1 T flax + 3 T water)<br />
1/2 tsp vanilla extract<br />
1/4 cup pumpkin (not filling)<br />
1 T &#8211; 1/4 cup dairy free milk<br />
Molasses, maple syrup and butter, for topping (Optional)</p></blockquote>

<blockquote><p> &#8211; The amount of milk you use depends on the brand of coconut flour and protein powder used.</p>
<p>&#8211; If you don&#8217;t use protein powder, add an extra tablespoon of flour.</p>
<p>&#8211; If you use an unsweetened protein powder, add a T of sugar or sweetener of choice.</p></blockquote>

<p>Now just follow these simple steps to make these special <strong>Pumpkin Gingerbread Pancakes</strong>:<br />
&nbsp;<br />
&nbsp;</p>
<blockquote><p>1. In a large mixing bowl, sift the coconut flour, protein powder and baking powder to avoid clumps. Add in the spices, sweetener and salt and mix well.</p>
<p>2. In a small bowl, whisk the egg whites (or flax egg) with the vanilla extract.</p>
<p>3. Add this to the dry mixture and stir until a dough like consistency. Add in the pumpkin and slowly add the milk one tablespoon at a time until a thick batter is formed.</p>
<p>4. Heat a frying pan on low heat and spray with cooking oil. Once pan is extremely hot, pour 1/4 cup servings of the batter and cover. Once bubbles appear and the edges go brown, remove cover, flip the pancakes and cover again for approximately 1 minute. Repeat until all the batter is used.</p>
<p>5. Allow pancakes to cool slightly and top with butter, maple syrup and molasses.</p></blockquote>
