Hearty Healthier Make-Ahead BREAKFAST BOWLS

The ingredients you’ll need for 4 Savory Sausage Breakfast Bowls are:
 
 

¾ lb (375g) chicken or turkey sausage
6 cups mixed root vegetables (cubed): potato, sweet potato and butternut squash pictured
1 tablespoon olive oil
2 tablespoons maple syrup
¼ teaspoon ground cinnamon
salt & pepper
1 red onion

Now just follow these easy preparation steps …
 
 

1. Heat oven to 400°F.

2. Place a wire rack over a baking sheet and add the sausages.

3. In a large bowl, toss the veggies with the olive oil, maple syrup, cinnamon, salt and pepper.

4. Bake everything for 15 minutes.

5. Flip the sausages, stir up the potatoes, and return to the oven for another 15 minutes.

6. Remove the sausages from the oven and allow to cool.

7a. Increase the oven to 450°F. Scatter the onions over the potatoes. Return to the oven and bake for another 15 minutes.

OR

7b. Grill the sausages over medium heat, turning every 2 minutes until cooked through (will vary depending on the size of the sausages…roughly 10 minutes for large sausages)

Note that the cooking times mentioned above are for small breakfast sausages. Increase the cooking times if you use larger sausages!
