It&#8217;s healthier (and cheaper!) to make your own energy bar snacks at home. Here&#8217;s a healthy recipe with dates, nuts, cocoa powder, coconut and vanilla that is really decadent and delicious. No cooking! You will be amazed with the end result.<br />

Here is the recipe:<br />

<strong>Chocolate-Cashew-Almond Energy Bar Recipe</strong><br />
</br></p>
<blockquote><p><em><strong>Ingredients:</strong></em></p>
<p>2 Cups (300g) Moist Medjool Dates, pitted and chopped<br />
2 Cups (280g) Raw Cashew Nuts<br />
½ Cup (60g) Raw Almond (without skin)<br />
¾ Cup (75g) Cocoa Powder<br />
A Pinch Of Sea Salt<br />
½ Cup (40g) Unsweetened Shredded Coconuts<br />
2 Tbsp Vanilla Extract<br />
2 to 3 Tbsp Cold Water</p></blockquote>
<p></br></p>
<p>Before making this, check to see how dry the dates are since you want them to be relatively moist. You may want to soak them overnight in water before tossing them in the food processor with all of the other ingredients. Make sure that the all of the pits are removed, too!<br />
</br></p>
<blockquote><p><strong>Equipment needed: </strong></p>
<p>Food processor<br />
Loaf pan: 11½ x 4½ inches (29 x 12 cm) , lined with aluminum foil<br />
</br></br><br />
<strong>Preparation:</strong></p>
<p>Combine chopped dates, cashews, almonds, cocoa powder, and sea salt in a food processor.</p>
<p>Pulse and process all the ingredients together until the texture is coarse.<br />
</br><br />
Then add the shredded coconut, a quick pulse, and add the vanilla extract, a little water at a time until it reaches a dry but moist dough consistency.<br />
</br><br />
Scrape the dough mixture into the lined pan, press evenly with a rubber spatula, and chill for about an hour before serving.</p></blockquote>

These delicious protein-packed snack bars are made with crystallized ginger, coconut, vanilla, and almonds to give them an abundance of flavor. These vegan treats are also easy to make (without a food processor) and healthy: no dairy, no egg, no soy and gluten free.<br />

One variation is to substitute apple cinnamon protein cereal in the place of the corn flakes.<br />

Here are the ingredients you&#8217;ll need for a 9&#215;9 pan of Kristina&#8217;s <em><strong>GINGER VANILLA PROTEIN CRUNCH BARS:</strong></em><br />
</br></p>
<blockquote><p>2 tablespoons butter (soy free)<br />
1/4 cup agave or maple syrup<br />
1/4 cup coconut milk (carton)<br />
2 scoops vanilla protein powder<br />
1 cup oats<br />
1 cup corn flakes, pounded to large crumbs<br />
1/2 cup raw almonds, chopped<br />
1/4 cup sunflower seeds<br />
1/2 cup crystallized ginger, chopped<br />
1/4 cup shredded coconut</p></blockquote>
<p></br></p>
<p>Here are the 9 easy steps to make these yummy Ginger Vanilla Protein Crunch Bars:</p>
<blockquote>
<ol>
<li>In saucepan over medium low heat, melt butter, whisk in agave.</li>
<p></br></p>
<li>Add milk and protein powder, whisk together until smooth.</li>
<p></br></p>
<li>In large bowl, add oats, corn flakes, almonds, sunflower seeds and about 3/4 ginger pieces.</li>
<p></br></p>
<li>Pour melted butter mixture over dry ingredients, mix together thoroughly.</li>
<p></br></p>
<li>Line a 9×9 baking dish with parchment or foil, spray.</li>
<p></br></p>
<li>Transfer mixture into pan; using wet hands, press down in even layer.</li>
<p></br></p>
<li>Sprinkle shredded coconut and remaining ginger pieces, press down into bars.</li>
<p></br></p>
<li>Bake at 325 for 20 minutes.</li>

<li>Let cool before cutting.</li>

<blockquote><p>I typically ferment the water from a young coconut for a probiotic rich drink, then scoop out the flesh, Remove any brown skin left on the meat, and blend it up. If I just want a little dessert I add a couple drops of stevia, and some vanilla and make it into a pudding.</p></blockquote>
<p>Follow this recipe to make a delicious super-healthy, probiotic-rich yogurt in 20 minutes with the following ingredients:<br />

Kamut is an ancient grain packed with protein and B vitamins. It is also unusually high in selenium which is a powerful antioxidant. Then the prunes are added because they’re full of health fiber that everyone needs.</p>
<p>Here&#8217;s the list of ingredients for this <strong>Kamut Dark Chocolate Energy Bar</strong> recipe (serves 20):</p>
<p></br></br></p>
<blockquote>
<ul>
<li>⅔ cup prunes</li>
<li>1½ cups water</li>
<li>¾ cup coconut</li>
<li>¾ cup kamut flour or gluten free flour</li>
<li>1 cup gluten free large flake oats</li>
<li>½ cup dried cranberries</li>
<li>½ cup gluten free dark chocolate, cut into slivers (or chocolate chips)</li>
<li>½ cup pumpkin seeds, toasted</li>
<li>¼ cup hemp hearts</li>
<li>1 banana, mashed</li>
<li>3 TBP maple syrup</li>
</ul>
<p>This recipe is easily adaptable to whatever your cupboards are filled with.  Feel free to play around and substitute ingredients like the pumpkin seeds, dried cranberries, chocolate, or hemp hearts with whatever you have on hand.</p></blockquote>
<p>This will take you about 45 minutes to make:</p>

<blockquote><p><strong>Directions</strong></p>

<li>Preheat oven to 350. Grease a jelly roll pan (or cookie pan).</li>

<li>Put water and prunes in pot, over med-high heat. Bring to a boil. Take off and set aside for 10 minutes.</li>
</ol>

<li>Put the coconut in a dry pan over medium heat. Stir occasionally until golden brown, about 3 minutes. Set aside.</li>
</ol>

<li>Put the coconut, kamut or gluten free flour, gluten free oats, cranberries, chocolate, pumpkin seeds, hemp hearts in bowl. Stir. Stir in the mashed banana and maple syrup.</li>

<li>Add the prunes and water to a food processor or bullet. Puree until smooth. This should make about ¾ cup prune paste. Add to the wet/dry mixture.</li>

<li>Pour onto the pan and press down to pack. It should be about ¾inch thick. Bake for 25-30 minutes. Take out and cut into 20 squares. Let cool completely before removing.</li>

<li>Line and 8 inch baking pan with parchment paper or saran wrap, and set aside.</li>
<li>Pulse cashews in food processor until crumbly, place in a separate bowl.</li>
<li>Pulse apricots in food processor until finely chopped. Add all other ingredients to the apricot mixture and process until well combined.</li>
<li>Add the chopped cashews to the mixture and pulse until combined.</li>
<li>Firmly press the apricot mixture into the baking pan, using the flat surface of a measuring cup to create a flat even layer.</li>
<li>Place pan in the freezer for one hour, then remove and cut into 8 rectangle bars (or more or less, depending on desired size).</li>

<p>You don&#8217;t really need to drink dairy milk for stronger bones, especially if you tend to be lactose intolerant or if you’re allergic to dairy. And there are, of course, other reasons why people may choose to boycott the dairy industry and dairy products. The typical &#8220;milk&#8221; alternatives are soy milk, coconut milk, nut milk, seed milk and grain milks such as rice milk, quinoa milk, barley milk and more.<br />

If you want to make a healthy alternative milk at home, here&#8217;s a simple recipe!<br />

<strong>Ingredients</strong></p>
<ul>
<li class="ingredient">1 cup of mixed nuts and seeds (almonds, walnuts, cashews, pistachios, pecans, macadamia nuts, brazil nuts, peanuts etc, sesame seeds, sunflower seeds, pumpkin seeds etc)</li>
<li class="ingredient">1 liter of water</li>

<p>There will always be some &#8220;residue&#8221; when you make your own healthy milk. My recommendation is to just drink it all &#8230; it&#8217;s all good!<br />

<strong>Instructions</strong></p>
<ol>
<li class="instruction">Soak nuts and seeds in a bowl and cover them with enough water and place it in the fridge over night.</li>
<p></br></p>
<li class="instruction">Discard the soaking water and rinse the nuts and seeds in a fine sieve.</li>
<p></br></p>
<li class="instruction">Throw them with 1 liter of water into the blender, and blend until they&#8217;re creamy and smooth.</li>
<p></br></p>
<li class="instruction">If you want extra fine milk, filter the residue with cheese cloth. Otherwise, drink it as it is!</li>

They&#8217;re easy to make (without a food processor) and packed with protein. Also: vegan (no-dairy, no-egg), no-soy and gluten-free.</p>
<p>In addition to being perfect snacks, these bars are great for breakfast and ideal for including in a packed lunch.</p>
<p>One popular variation is to substitute&nbsp;apple cinnamon protein cereal in the place of the corn flakes in this recipe.</p>

1/4 cup sunflower seeds<br />
1/2 cup crystallized ginger, chopped<br />

<p>Here are the 9 easy steps to make these yummy Ginger Vanilla Protein Crunch Bars:</p>

<li>In saucepan over medium low heat, melt butter, whisk in agave.</li>
<li>Add milk and protein powder, whisk together until smooth.</li>
<li>In large bowl, add oats, corn flakes, almonds, sunflower seeds and about 3/4 ginger pieces.</li>
<li>Pour melted butter mixture over dry ingredients, mix together thoroughly.</li>
<li>Line a 9×9 baking dish with parchment or foil, spray.</li>
<li>Transfer mixture into pan; using wet hands, press down in even layer.</li>
<li>Sprinkle shredded coconut and remaining ginger pieces, press down into bars.</li>
<li>Bake at 325 for 20 minutes.</li>
