Try this healthy homemade version of a “Chipotle” <strong>Vegan Burrito Bowl</strong> or <strong>Taco Bowl</strong> and add some roasted chicken or taco meat on top if you&#8217;re not restricted to a vegan diet.<br />

Pinch of sea salt<br />
Pinch of taco seasoning<br />
1 black bean burger, heated and sliced<br />
1/3 cup red bell peppers, sliced<br />
1/4 cup yellow onion, sliced<br />
1/3 cup salsa, divided<br />
1/4 cup black beans<br />
1/4 of one avocado<br />
2 tablespoons sliced olives<br />
1/4 cup vegan shredded cheese (optional)<br />
1 tomato, chopped<br />

Follow these easy preparation steps that Cassey explains in more detail in the video, below:</p>
<blockquote><p>1. Preheat oven to 400°F.</p>
<p>2. Remove stems from cauliflower and chop florets slightly. Place into a food processor and “rice” until it resembles short-grain rice. Lay cauliflower on a nonstick baking sheet and sprinkle with salt and taco seasoning. Bake for 20 minutes.</p>
<p>3. Coat a sauté pan with cooking spray and add the bell pepper and onion. Cook over medium heat until soft and caramelized (about 5 minutes).</p>
<p>4. Mix half of the salsa and beans together.</p>
<p>5. Assemble bowl by adding the cauli-rice, black bean burger, sautéed vegetables and bean mixture. Decorate with avocado, olives, cheese, tomato and cilantro. Top with remaining salsa, and serve.</p></blockquote>

								<content:encoded><![CDATA[<p>These awesomely delicious, freezer-friendly <strong>Breakfast Burritos</strong> provide an early morning boost of energy and nutrition &#8230; thanks to lentils, zucchini and more! Make a big batch ahead of time, then thaw them as needed for a thoroughly enjoyable breakfast.</p>
<blockquote><p><strong>Let me count the reasons I love these healthy breakfast burritos:</strong></p>
<p>1. Make ahead.</p>
<p>2. Freezer-friendly.</p>
<p>3. Little to no effort in the morning.</p>
<p>4. They are FILLING! I could only eat half of one, and it kept me going right on through till lunch! Love that!</p>
<p>5. They taste great! Cheese, eggs, lentils, some veggies. All wrapped up in a tortilla. So good.</p>
<p>6. They get nice and crispy. OK, so I used my George Foreman grill, which is absolutely perfect for heating these up in the morning. You’re going to want to flatten them slightly so that they warm right through. You can also use a fry-pan but it takes longer. Or, you could just heat them in the microwave on a paper towel. Any which way, they are not soggy.</p></blockquote>
