Lindsay shows how to make a delicious and easy breakfast the night before! Yummy French Toast!<br />
</br><br />
This is one of Lindsay&#8217;s breakfast recipes, especially when she&#8217;s having friends over early next morning. This way she doesn&#8217;t need to get up too early to make herself presentable.<br />
</br><br />
It&#8217;s easy to customize with different fruits or sauces and use a big loaf of french bread, or any other bread for this recipe:<br />
</br></p>
<blockquote><p>1. Cut your bread into one-inch-thick slices.<br />
</br><br />
2. Whisk together:<br />
</br></p>
<ul dir="ltr">
<li>9 eggs</li>
<li>1 1/2 cups of milk</li>
<li>2 tbsp of vanilla</li>
<li>1/2 tsp baking powder.</li>
</ul>
<p></br><br />
3. Arrange slices of bread on a baking sheet, pour the mixture over the bread, turning them to make sure they&#8217;re fully coated.<br />
</br><br />
4. Cover and refrigerate 4 hours or overnight.</p></blockquote>

<p>Then, in the morning:<br />
</br></p>
<blockquote><p>Preheat oven to 450 degrees. Arrange the slices in a baking dish and cover with frozen fruit, and sprinkle with more cinnamon and sugar.  Bake for 20-25 minutes.</p></blockquote>

This recipe for baking healthy homemade bread in a microwave oven is definitely worth trying if you want a healthy alternative to the typical store-bought bread. Most of the effort is mixing and kneading the dough. After that it only takes 5 minutes to &#8220;bake&#8221; in a microwave oven. Then pop in the toaster and it&#8217;s ready to eat!<br />
</br><br />
Ingredients needed to make a healthy loaf of whole-wheat bread (to serve 4) are:</p>
<blockquote>
<ul>
<li>450g (3 cups) Whole Wheat Flour</li>
<li>1 tbs (12g) Dry Active Yeast</li>
<li>1 Cup lukewarm Milk</li>
<li>1 tsp Sugar</li>
<li>½ tsp Salt</li>
<li>2 tbsp Oil / Margarine</li>
<li>Half cup lukewarm Water</li>
</ul>
</blockquote>
<p></br><br />
Using these ingredients, follow these 12 steps to make a loaf of <strong>Healthy Whole-Wheat Bread</strong>:</em><br />
</br></br></br></p>
<blockquote><p>
1.  Take ½ cup of lukewarm water, dissolve yeast and sugar in it then keep it to foam up and rise for about 10 minutes.</p>
<p>2.  In a bowl now mix Whole wheat Flour, Salt, Milk, Oil and the risen Yeast to make very soft dough. (Add water when required).Keep on kneading the dough for about 10 to 20 minutes.</p>
<p>3.  Leave the bowl completely covered with a plastic bag for about 2 hours in a warm place.</p>
<p>4.  You will see the dough has risen to double now.</p>
<p>5.  Knead it again for a while dusting the dough with the extra Wheat Flour if required.</p>
<p>6.  Take a plastic container and grease it with a little oil and dust some wheat Flour over it – remove the extra Flour.</p>
<p>7.  Place the dough in the container and spread it to the shape of container removing the air from the dough.</p>
<p>8.  Seal the container again with a plastic bag and keep it in the refrigerator overnight.</p>
<p>9.  Take out the dough from the refrigerator the next day about 5 hours before putting it to bake in the microwave for about 5 minutes on high power.</p>
<p>10  Pierce the bread with a toothpick to check if the bread is ready. (The toothpick will come out dry and clean.)</p>
<p>11. Take out the bread from the container and cool it over a perforated rack.</p>
<p>12. Serve hot baked in a toaster.</p></blockquote>

This healthy Cinnamon Walnut Loaf is an easy bread to make, in spite of a long list of ingredients. You&#8217;ll discover that it&#8217;s light and moist, mildly sweet and perfect with nut butter for breakfast. Note that it will not rise to the top of the pan like most breads, but the texture and flavor is absolutely divine!<br />

This recipe uses stevia as the sweetener and psyllium husks as a binder. The only fat in this loaf is from the nuts and the nut butter (no added oils).<br />
</br></p>
<blockquote><p>The version with quinoa is higher protein (always a good thing for a vegan bread), but I have to admit I preferred the flavor of the amaranth, which offers a more delicate crumb. While it’s not terribly sweet, the flavor is subtle and pleasing–a perfect bread for breakfast or snacking.</p></blockquote>
<p><em>FYI: Swapping out the sugar for stevia in the recipe was a bit challenging, since stevia can be up to 100 times sweeter than sugar, and alters both the chemical makeup and consistency of the bread &#8230;</em></p>

This healthy, mouth-watering <strong>Almond-Banana Muffin</strong> can be baked in a mug in your microwave oven in less that 3 minutes! It hits the spot with a perfect texture and lots of flavor. <blockquote><p> – It needs the egg for structure and texture.</p>
<p> – You could change up the nuts and use pecans or walnuts instead. I prefer them toasted, so I keep toasted ones in the freezer, then throw them in things when I need them.</p>
<p> – Cooking time is for my microwave. It usually cooks in 3 minutes for me. It’s important not to over-cook it, but obviously not to under-cook it either.  It will puff up in the microwave, then sink down again.  It pulls away from the sides.  I never use cooking spray.

If you want to try something healthy and different, here&#8217;s a recipe for <em><strong>Banana Bread With No Bananas!</strong></em> Call it &#8220;Zucchini Walnut Bread&#8221; if you want, but somehow that doesn&#8217;t conjure up the image of the incredibly delicious treat that it deserves &#8230;<br />

This fake banana loaf has the same moist dense consistency, and looks a lot like the real thing. There&#8217;s no banana flavor, of course, but it is nevertheless a healthy and yummy treat for all ages to enjoy.<br />
This a popular bread to enjoy in the morning for breakfast, or any other time of day.<br />
</br><br />
Here are the ingredients for <em><strong>Zucchini Walnut Bread</strong></em>:</p>
<blockquote><p>3 eggs<br />
1 1/2 cups brown sugar, packed firmly<br />
1 cup oil<br />
2 cups zucchini, grated finely<br />
1 1/3 cup walnuts<br />
1 1/2 cups self-raising flour<br />

¼ teaspoon salt<br />
½ cup crunchy peanut butter (or creamy)<br />
3 medium bananas, mashed<br />
½ cup dark brown sugar, packed<br />
½ cup granulated sugar<br />
¼ cup canola oil<br />
⅓ cup low-fat buttermilk<br />
2 eggs<br />
1 teaspoon pure vanilla extract<br />
½ cup semi-sweet mini chocolate chips</p></blockquote>

Here are the steps to make this extra-special version of <strong>Banana Bread</strong>:<br />

2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.<br />

3. In a medium bowl, whisk together the peanut butter, mashed banana, brown sugar, sugar, oil, eggs, and vanilla until well incorporated.
