It&#8217;s healthier (and cheaper!) to make your own energy bar snacks at home. Here&#8217;s a healthy recipe with dates, nuts, cocoa powder, coconut and vanilla that is really decadent and delicious. No cooking! You will be amazed with the end result.<br />

Here is the recipe:<br />

<strong>Chocolate-Cashew-Almond Energy Bar Recipe</strong><br />
</br></p>
<blockquote><p><em><strong>Ingredients:</strong></em></p>
<p>2 Cups (300g) Moist Medjool Dates, pitted and chopped<br />
2 Cups (280g) Raw Cashew Nuts<br />
½ Cup (60g) Raw Almond (without skin)<br />
¾ Cup (75g) Cocoa Powder<br />
A Pinch Of Sea Salt<br />
½ Cup (40g) Unsweetened Shredded Coconuts<br />
2 Tbsp Vanilla Extract<br />
2 to 3 Tbsp Cold Water</p></blockquote>
<p></br></p>
<p>Before making this, check to see how dry the dates are since you want them to be relatively moist. You may want to soak them overnight in water before tossing them in the food processor with all of the other ingredients. Make sure that the all of the pits are removed, too!<br />
</br></p>
<blockquote><p><strong>Equipment needed: </strong></p>
<p>Food processor<br />
Loaf pan: 11½ x 4½ inches (29 x 12 cm) , lined with aluminum foil<br />
</br></br><br />
<strong>Preparation:</strong></p>
<p>Combine chopped dates, cashews, almonds, cocoa powder, and sea salt in a food processor.</p>
<p>Pulse and process all the ingredients together until the texture is coarse.<br />
</br><br />
Then add the shredded coconut, a quick pulse, and add the vanilla extract, a little water at a time until it reaches a dry but moist dough consistency.<br />
</br><br />
Scrape the dough mixture into the lined pan, press evenly with a rubber spatula, and chill for about an hour before serving.</p></blockquote>

<li>1¾ cup pitted dates (soaked in warm water for 15 minutes, then drained)</li>
<li>½ cup unsweetened dried cranberries</li>

<li>¼ cup whole raw almonds</li>
<li>½ cup instant plain oats (gluten free if you need!)</li>

<p>Here are the ingredients you&#8217;ll need to make a batch&nbsp;of <strong>Homemade 3-Ingredient Energy Bars</strong> in only 5 minutes:<br />

<blockquote><p>1 cup almonds<br />
1 cup dates<br />
1 cup unsweetened dried cherries</p>
<p><strong>Note:</strong> You can substitute almonds and cherries with any nuts and dried fruits, but make sure to keep the dates. Dates act as a binder and sweeten your energy bar without adding any artificial sugar.</p></blockquote>

<li>Combine all ingredients in a food processor.</li>
<li>Pulse a few times.</li>
<li>Process for 30 seconds.</li>
<li>TURN OFF AND UNPLUG the food processor. Scrape the edges of the bowl to make sure nothing is&nbsp;sticking.</li>
<li>Process for 1-2 min continuously until a ball is formed.</li>
<li>Place saran wrap on top of a cutting board.</li>
<li>Put the ball on top of the saran wrap and press into a 8&#215;8 inches disk with your hands.</li>
<li>Wrap the disk and chill in the fridge for at least 1 hour.</li>
<li>Unwrap the disk and place on a cutting board.</li>
<li>Cut into 16 squares, 8 long bars or roll into 32 small balls.</li>
<li>Wrap each square/bar/ball individually and store in the fridge for 2-3 weeks or in the freezer for up to&nbsp;3 months.</li>

This is a vegetarian <strong>coconut quinoa</strong> recipe with toasted nuts and dates for a healthy light meal that&#8217;s both comforting and nourishing. It&#8217;s easy to make this the night before so it&#8217;s ready to eat the next day as a cold meal, or gently reheated with a splash of milk (dairy or non-dairy).<br />

Here are the ingredients you&#8217;ll need for 4 &#8211; 6 delicious servings:<br />
</br></p>
<blockquote><p>1 13.5-ounce can coconut milk<br />
1 cup water<br />
1 cup quinoa, rinsed<br />
A pinch of kosher salt<br />
1/4 cup honey or brown sugar, or to taste<br />
1 tsp almond extract<br />
3/4 cup toasted nuts, coarsely chopped (I recommend a mix of almonds, hazelnuts, and pistachios, but other combinations will work too)<br />
1/2 cup dates, chopped<br />

Yovana (aka &#8220;Rawvana&#8221;) shows how to make a healthy &#8220;no-cook&#8221; vegan version of her favorite Oreo Cookies with low-calorie ingredients. Even though these ingredients are different &#8212; and a lot healthier &#8212; these Oreo Cookies are just as delicious as the store-bought variety. Be sure to make enough, since they tend to disappear as soon as you make them!<br />

30 soaked dates<br />
2 tablespoons raw carob powder<br />
